When I first had the idea of a pear and walnut salad I wasn’t convinced that it would work, so I had to try it. And my oh my, what a triumph! This salad is ideal for hot summer days as the herbs and pear slices create a freshness and the nuts and cheese an indulgence that is hard to compare. It would make for a great light lunch – however – it is undeniably gorgeous with pan-fried meatballs.
Handful of rocket
1 x sliced pear
2 x sliced spring onions
100 g walnuts
100 g feta
- Arrange herb lettuce as a base in a salad bowl.
- Add the rocket, spring onions, pear slices and walnuts.
- Crumble the feta on top of the salad and serve with a creamy salad dressing.
