I was visiting my mother-in-law the other day and came across her collection of recipe books, some old and some new; what an inspiration! I found some absolute classics which I’m eager to try, but there were also some real exotic and adventurous recipes.
Today’s creamy pasta recipe is inspired by one of those. In my opinion you can never go wrong with pasta and if you add some cream with that it’s bound to be a winner. This is also one of those pots that you can prepare the day before – it gets better the longer it rests.
250 g farfalle pasta
250 ml cream
1 teaspoon thyme
200 g ham, sliced into bite sized squares
200 g frozen peas
Handful of grated white and yellow cheddar
2 tablespoons grated parmesan
- Cook the pasta until it’s almost done.
- Heat the frozen peas in the microwave.
- Add all ingredients to pasta while on medium stirring continuously for about 5 minutes.
- Allow pasta to simmer for 10 minutes and serve.
