Malaysian fried rice noodles with pork

A good friend of mine recently treated me with a recipe book by Vatcharin Bhumichitr. It has noodle recipes from all over Asia that includes stirfries, soups and salads.  The fried rice noodles was inspired by one of the recipes in the Bhumichitr book.

Fried rice noodles involves the cooking of an egg with the noodles which is absolutely beautiful with pork neck. This noodle dish is juicy and fresh and just what the doctor ordered if you’re feeling a bit adventurous.

Ingredients:

2 chopped red onions

2 teaspoons garlic

300 g cubed pork neck

2 chopped chillies

1 lightly beaten egg

200 g cooked vermicelli noodles (according to packet’s instructions)

2 tablespoons oyster sauce

4 tablespoons soy sauce

150 g beansprouts

2 chopped tomatoes

4 spring onions

Method:

  1. Fry the onions in a little oil until they start to brown. Add the garlic, pork and chillies and fry until the pork is almost done.
  2. Add the egg (with salt to taste) and stir well.
  3. Mix in the noodles and add the oyster and soy sauce and then the beansprouts and tomatoes.
  4. Serve with spring onions.
