I was actually planning to make a special strawberry salad last week, but the avocados I wanted to use went brown before I could even reach for a salad bowl. My husband suggested that he could throw a nice piece of meat on the braai instead (he’s forever looking for an excuse to use one of his three braais). So that’s what we did, and it was lip-smacking – as always.
Problem was, now I had all these strawberries and no idea what to do with them. I can’t remember ever really tasting strawberry ice cream. We all know strawberry milkshake and the pink parts of Neapolitan ice cream, but ice cream made of fresh strawberries? I honestly haven’t. So I had to give it a try!
200 g fresh strawberries, cut into quarters
1 tablespoon fresh lemon juice
250 ml sugar
500 ml cream
250 ml milk
10 ml Grundheim strawberry liqueur
- Combine the strawberries, lemon juice and 50 ml sugar. Let it cool in the fridge for an hour.
- Beat the eggs and add 200 ml sugar. Mix well and add the milk and liqueur.
- Add the refrigerated strawberries and gently stir in the cream.
- Chill for 12 hours.
- Churn your ice cream according to your machine’s specifications.
