Broccoli and red pepper salad


This sounds terribly strange coming from the biggest advocate for more is more, but sometimes less really is more.

Take this simple broccoli and red pepper salad, only three ingredients and you have the perfect side dish for a juicy T-bone steak, braaied to perfection. You’re not in need of a showstopper, you want something that compliments the meat and adds some colour to your plate.  The broccoli and red pepper combination is often found as pizza toppings and ingredients to quiches; it works so well as a fresh salad though.



250 g broccoli florets

1 sliced red pepper

5 chopped spring onions


  1. Boil the broccoli with some salt and water for about 5 minutes. Strain it and let it cool for about half an hour.
  2. Arrange the broccoli, red pepper and spring onions in a salad bowl and serve with a creamy salad dressing.
