Summer is such a great season. The days are longer, people are happier and the fruit is absolutely fantastic. When going to the green grocer these days I need to push a trolley, a basket just won’t do. Peaches, watermelon, grapes, kiwis… I can’t seem to get enough!
This salad screams hot summer nights. The sweetness of the peaches and peppers are complimented by the saltiness of the chicken and feta cheese and makes for a perfect light dinner.
3 chicken breasts, cut into bite sized pieces
1 teaspoon ginger
1 teaspoon garlic
2 teaspoons soy sauce
1 teaspoon Ina Paarman chicken spice
Sweet baby leaf salad
2 peaches, sliced
1 Italian sweet pepper, sliced
Handful of Danish feta cheese
1. Fry the garlic and ginger in a splash of olive oil. Add the chicken, soy sauce and chicken spice and fry until the chicken is done.
2. Set the chicken aside to cool.
3. Arrange the baby leaf salad in a salad bowl. Add the peppers, peaches, chicken and feta cheese.
4. Serve with balsamic vinegar.
