With all the parties and family gatherings this time of year we tend to overeat. A lot. I’m not talking about an extra helping of greens, this eating fest usually involves tons of meat, fried potatoes and delectable puddings. And why not? We have all the wonderful things of 2013 to celebrate and a tremendous 2014 to look forward to.

Having said that, I try to squeeze in a healthy meal here and there. This salad is light enough for summer dining and has enough substance to fill you up. Enjoy with a fresh slice of bread, just to remind you it’s the festive season!

Ingredients:

1 melon, cubed into bite-sized pieces

Few slices of salami

3 spring onions, sliced

Handful of peppadews

Handful of feta cheese

Handful of chives, chopped

Method:

1. Toss all the ingredients together and serve with black pepper and a creamy blue cheese dressing.
