I was utterly impressed by the beautiful colours of this strawberry and avocado salad; it was almost too pretty to eat. But thank goodness that we did dig in, it was deeeelicious! It is a wonderful companion for angelfish wrapped in tinfoil and braaied to perfection by my dearest. This is the type of dinner that personifies the cheerfulness and delight of summer.
Thanks Boet and Skoonsus for the avocados from the lowveld, they were the inspiration for this salad and absolutely divine!
Handful of rocket
1 avocado, chopped into bite-sized pieces
8 strawberries, halved
Handful of beansprouts
Few shavings of pecorino cheese
1. Toss all the ingredients together. Serve with black pepper, Lavender and Lime Balsamic and Pomegranate Syrup (my hubby bought this for me; it is gorgeous!) and fish.
