Recipes with the words “mix everything together and pop it in the oven” make me smile. And when the dish is as delicious as this one, it’s an absolute marvel. I’m not fond of using tinned food, but there are a few exceptions of which sweet corn is one. It is absolutely brilliant if you fill gem squash with it and top it with cheese or bake a loaf of bread, again adding lots of cheese.

This sweet corn side dish goes very well with steak, lamb or pork chops and chicken skewers.

Ingredients:

400 g sweet corn

1 tablespoon butter

2 tablespoon cornflour

250 ml milk

pinch of salt

half a teaspoon baking powder

100 ml sugar

Method:

1. Mix all the ingredients.

2. Bake for 45 minutes at 180 degrees or until golden brown.
