Chorizo and avocado pizza


We are usually too lazy to get in the car to buy take-away food when the urge strikes. This is no doubt a good thing, as we are in general quite dissatisfied with what is usually a piece of chicken drenched in oil or limp potato chips that lacks flavour. So for these times I try to keep back-ups in the freezer – stuff like store-bought pizza bases that you can glam up in just a few minutes.

The past weekend we really had a treat with chorizo, mushrooms and the first great avocados of the season. Chicken or bacon would work really well if you don’t have chorizo at hand. You can’t beat homemade food, even if you cheat it a little. 🙂



2 store-bought pizza bases

1 teaspoon garlic

Handful of chopped mushrooms

1 thinly sliced chorizo

1 sliced avocado

Handful of grated mozzarella cheese

1 teaspoon oregano


1. Spread the garlic on the pizza bases. Add the mushrooms and chorizo and sprinkle with oregano.

2. Top with mozzarella cheese. Bake in the oven at 180 degrees for half an hour.

3. Top with avocado and lots of black pepper just before serving.
