Oyster mushroom and tuna pizza


A colleague of mine mentioned that they were having fish for supper and that started the whole office on fish recipes: steamed fish, curried fish, fish on the braai, fish cakes and fried fish, to mention but a few. By the time we had a tea break I was ready to rush off to our local fish and chips shop and buy all the fish I could carry. But alas, due to the 15 flights of stairs and unmentionable traffic I had to endure, I decided to rather keep on dreaming of our finned friends.

When eventually arriving home there was but one thing to do: check the freezer for fish. You guessed it. Nothing. There were, however, two tins of tuna in the pantry that I put to good use. I needed to use the oyster mushrooms I purchased the day before and it made for a brilliant combination with the tuna and avocado. Yum yum yum – I really do love pizza!




2 store-bought pizza bases

200 g oyster mushrooms

1 to 2 tins of tuna

2 avocados

1 teaspoon garlic

1 teaspoon oregano

Handful of grated mozzarella


1. Spread the garlic on the pizza bases. Add the mushrooms and tuna and sprinkle with oregano.

2. Top with mozzarella cheese. Bake in the oven at 180 degrees for half an hour.

3. Top with avocado and lots of black pepper just before serving.
