Winter is creeping up on us, so I wanted to make a nice summery salad for old times’ sake. When searching the isles of our local green grocer for pops of colour I can use in the salad, I came across pretty red strawberries that would complement the different shades of green I planned to use. Although colour is very important when creating a salad, texture is another vital component . I originally wanted to use peanut brittle, but when I stumbled upon the caramalised peanuts I realised that they are the perfect size for the job.
The tasty combination of this salad is one that could without a doubt carry me through winter. So, bon voyage my friend Fresh Cold Salad – until we meet again in spring.
150 g strawberries, halved
150 g caramalised peanuts
100 g Danish feta cheese, cubed
1 avocado, cubed
1 cucumber, peeled and cubed
Handful of baby leaf salad
Handful of beansprouts
Handful of pumpkin seeds
- Toss all the ingredients together and serve with balsamic vinegar or a flavoured balsamic syrup.
