My new favourite sandwich: Chicken with dried cranberries

Never underestimate the power of a good sandwich. This girl aimed to make 300 different sandwiches to get her boyfriend to propose. They’re engaged now – I think it happened around sandwich number 257. 🙂

I didn’t expect anything spectacular when creating this chicken sandwich, but I have to say this: I think I have made the best sandwich on the face of the earth. Please, try it! All the elements you could possibly wish for are in this one sandwich; the crunch of celery paired with the sweetness of cranberries, the creaminess of Camembert cheese and the sharpness of the rocket – it is just delectable!

Ingredients:

2 ciabatta rolls

2 chicken breasts, deboned

Handful of baby spinach

Handful of rocket

2 sticks of celery, chopped

4 slices of Camembert cheese

Handful of dried cranberries

Method:

  1. Fry the chicken breasts in a splash of oil, adding salt to taste. Once the breasts are cook, gently pull apart smaller pieces of the chicken.
  2. Cut open the ciabatta rolls, warm them up or toast them and apply some butter generously on both sides.
  3. To assemble the sandwich, place a bed of rocket and spinach on the roll. Add a handful of chicken and top with celery.  Place two slices of Camembert cheese on that and sprinkle some dried cranberries over the sandwich.
  4. You can round it off with black pepper or a balsamic syrup.
