Blue cheese and bacon pasta

I constantly hummed I don’t like Mondays by the Boomtown Rats today. If I had a piano nearby I probably would have nailed the intro (just to give you an idea of how many times the song has made it through my head today). You have to admit though, it’s a classic. “Tell me why I don’t like Mondays, tell me why I don’t like Mondays …  I wanna shoo-oo-oo-woo-woo-woot the whole day down.”

Gmf, tell me about it. A blue cheese and bacon pasta recipe for a blue Monday. It will definitely cheer up your taste buds! Better luck next Monday…

Ingredients:

300 g pasta (I used shells)

1 onion, sliced

1 teaspoon garlic

250 g bacon, cut in chunks

100 g blue cheese

250 ml cream

200 ml milk

Method:

  1. Cook the pasta according to packet instructions. Drain the pasta once cooked and set aside.
  2. Fry the garlic and the onion in a splash of oil. When the onion turns translucent, add the bacon and fry until cooked.
  3. Add the cream, milk and blue cheese to the pasta and bring to a boil.  Add the bacon mixture and simmer for about half an hour to let the flavour mature.
  4. As the dish is quite rich, I recommend serving it with a green salad.
