Chicken and cashew curry


Chicken and cashew nuts go together like, well, like a big Sony television and surround sound, like leather seats and a Mercedes-Benz AMG, and like my hubby’s credit card and Yuppiechef. It just works. And if you add curry to the equation, you have yourself a dream come true.

This chicken and cashew curry really is one of my favourites. I suggest serving it with basmati rice, but naan bread would be delicious with it as well.



4 chicken breasts, cut into small cubes

1 onion, chopped

1 teaspoon garlic

2 tablespoons tomato paste

1 tablespoon garam masala

3 teaspoons minced chilli

100 g cashew nuts

1 tablespoon lemon juice

100 ml plain yogurt

1 cup chicken stock


1. Fry the onion and garlic in a splash of oil. Once the onion turns translucent, add the chicken and brown.

2. Add the tomato paste, garam masala, chilli and cashew nuts and fry for about 2 minutes.

3. Add the lemon juice, yogurt and chicken stock and simmer for about an hour.

4. Serve with basmati rice or naan bread.
