Take five: Mortar and pestles

I’ve got so many ideas for pesto’s, ranging from the average basil or coriander pesto to more exotic flavours involving pumpkin seeds and kakiebos. Combining the oil, garlic, herbs and nuts to form a splendid condiment – without letting any of the ingredients fade into the background – can be tricky. It’s a process that I would prefer doing by hand rather than involving electric tools.

This is a job for a mortar and pestle.  Here are five of my favourites:
