Pastrami, brie and fig sandwiches

It was yesterday around 12:30 when we felt the tremor. According to sources it was a 5.5 on the Richter scale. I was sitting at my desk on the 15th floor, my heart pounding in my chest, when we were told to evacuate. This is not something I want to experience again. Nobody I know was injured and it seems that no real damage was done. But still, the helplessness – not loving it.

After a day of adrenaline pumping through your veins (not in a good way), cooking is not really very high on the list of priorities. But eating like a king is. I opted for sandwiches so comforting you’ll want to exchange your favourite soft toy for one. Pastrami, brie, syrupy green figs. On a baguette. Ya feel me?

Ingredients:

1 long French baguette

Handful of lettuce

4 slices pastrami

Few slices of brie

Few slices of preserved figs

Method:

  1. Cut the baguette in half and then cut each half open.
  2. Butter the bread and lay lettuce on the bottom of the sandwich.
  3. Place to slices of pastrami on each sandwich and top with brie and figs.
  4. Serve with a hot cup of tea.
