Beef and brinjal pitas with tzatziki

Just like Martin Luther King Jr, I also have a dream. I dream of working from home, going on sporadic bicycle rides to the butcher and greengrocer, and painting landscapes on our porch. I dream of year-round summer, children laughing and friends joking around. I dream of picnics, and cranberry and apple iced tea, and tasty beef and brinjal pitas with tzatziki.

I dream of many more things… but kinda lost my train of thought at beef and brinjal pitas with tzatziki. It is Mediterranean inspired and combines classic flavours such as yogurt, brinjal and garlic. It really is extraordinary and you can add different elements, like peppers and mushrooms, to suit your appetite.

Ingredients:

4 pita breads

300 g beef strips

1 large brinjal, halved and sliced

1 onion, sliced

200 ml plain yogurt

Handful of chopped dill

2 teaspoons garlic

1 tablespoon olive oil

1 tablespoon lemon juice

Method:

1. Mix the yogurt, dill, garlic, olive oil and lemon juice to make your tzatziki. Add salt and freshly ground black pepper to taste and set aside.

2. Fry the onion in a splash of olive oil. Once the onion turns translucent, add the beef strips and brinjal and brown.

3. Cut open the pita bread, fill with beef, onion and brinjal and drizzle tzatziki over the filling. Enjoy!
