Crockpot spicy beef wrap

I have a slight fear of new appliances. It’s so intimidating. All those buttons and the instruction manual totally overwhelm me. Luckily my hubby thrives on situations like these and saves the day by figuring out how the electronics work (within seconds by the way).

With this recipe I (read: my hubby) used our slow cooker for the first time. I am totally hooked! You chuck the ingredients into the crockpot, press a button and what follows is meat that falls from the bone and is packed with flavour. I’m afraid the slow cooker won’t be getting a space in a cupboard – I’ll be using it all the time!

600 g beef (I used chuck)

1 onion, chopped

1 teaspoon garlic

1 teaspoon chilli flakes

1 teaspoon cumin

1 teaspoon turmeric

1 teaspoon paprika

1 liter beef stock

4 tortilla wraps

1 avocado, sliced

150 ml sour cream

Handful of fresh coriander, chopped

1 tomato, chopped

1 red onion, chopped

1. Place the beef, garlic and onion in a slow cooker. Add the spices and the beef stock and cook for 8 hours on low.

2. When the meat is done, pull it apart using two forks.

3. To assemble your wrap, drop spoonful’s of avocado and sour cream onto your tortilla. Top it with some beef, red onion, tomato and the fresh coriander.
