I recently came across Jamie Oliver’s healthy living tips. I actually quite enjoyed reading it, because ol’ Jamie understands that you need to indulge in a scoop of creamy ice cream or slice of freshly baked bread from time to time. It’s all about balance, you see?
This Thai green beef curry will make Jamie proud. It is a healthy home cooked meal with lots of green vegetables, not too much meat and such intense flavour it will blow your socks off! Jamie also states that variety is key when eating – I’m thinking he means we should have cheesecake for dessert! 🙂
400 g beef strips
2 teaspoons green curry paste
1 onion, chopped
1 can coconut milk
6 baby marrows, chopped
Handful of sugar snaps
1 tablespoon fish sauce
3 teaspoons brown sugar
1 tablespoon lemon juice
Handful of chopped coriander
- Fry the onion in a splash of oil. Brown the beef and add the curry paste, fry for around 5 minutes.
- Add the coconut milk, sugar snaps and baby marrows.
- Cook at a medium heat for 20 minutes and add the coriander, lemon juice, fish sauce and brown sugar.
- Serve with basmati rice and fresh coriander.
