When I was about 11 or 12, I often used to ask my mom if I could make dinner. And no, unfortunately I wasn’t a Julia Child wunderkind. Dinner would consist of my idea of a croque monsieur, which is fancy French for grilled ham and cheese. Except that I was super lazy and popped it in the microwave instead of grilling it in a pan. Epic fail! How my mom could eat it (with a smile on her lovely face) is beyond me. That’s true love, people.
Lucky for my hubby, we have a panini press for all our grilled cheese needs. This grilled ham and cheese with guacamole and fried eggs is an all-grown-up version of my croque monsieur, or rather croque madame (‘cos it has my favourite: eggs!). Don’t be shy with the guacamole and cheese. This sarmie is deliciously filling for breakfast, lunch or dinner.
4 slices of bread (I used rye bread, it worked very well)
4 slices of smoked ham
4 tablespoons guacamole
Handful of grated cheddar cheese
2 teaspoons grainy mustard
2 fried eggs
- I like to butter the bread on the outside rather than the inside when using my panini press. Start by topping a slice of bread with 2 tablespoons of guacamole.
- Layer 2 slices of ham on the bread and smear a teaspoon of grainy mustard on the ham. Top with some cheese and the other slice of bread and toast in the panini press until the bread has browned and the cheese has melted.
- Top the toasted sarmie with an egg and serve with Tabasco or Sriracha sauce.
