Apricot salad with paprika and celery


So everything for Christmas is sorted, but there are still quite a few things that need to be done before 2015. I’m such a sucker for the idea of turning a new leaf, making a fresh start and all that. That entails, however, a top-to-bottom-inside-out good ol’ scrubbing of our entire house, including curtains, carpets and cupboards, and then organising the whole shebang. My time is kind of running out, but a girl’s gotta do what a girl’s gotta do for a squeaky clean start to 2015.

A healthy salad chock full of vitamins that is easy to prepare and tastes delicious is perfect for these last summery days of 2014. The apricots are the stars of the show and are complimented by the crunchy celery and sharp-tasting paprika. Definitely a recipe to carry over to the new year.



5 apricots, pitted and quartered

Handful of iceberg lettuce, chopped

Half a cucumber, sliced

1 fresh paprika, sliced

1 stick of celery, chopped


1. Toss all the ingredients together and serve with balsamic vinegar.
