French toast with guacamole and peppered ham


I recently read that if you have an idea or feeling that keeps coming back to you, you need to make it happen. If an idea keeps coming back, it’s for a reason – you need to take action and follow the ideas that flood your mind.

I’ve been toying with a few ideas regarding French toast. Guacamole (and cheese, obviously) returned time and again, and so this breakfast feast was born. Best you make a few extra slices, these are deeeelicous!



4 slices of bread

2 eggs

50 ml milk

Handful of grated cheddar cheese

50 g guacamole

4 slices of peppered ham

Maple syrup


1. Warm up a non-stick pan on a medium heat. Lightly beat the eggs and milk with a dash of salt and pepper in a cup.

2. Pour the egg mixture into a shallow bowl. Quickly dip a slice of bread into the egg mixture, first on the one side and then on the other. Make sure the bread is not soggy.

3. Fry the bread for 2 minutes on one side, flip it over and fry for another 2 minutes on the other side. Repeat process with the remaining 3 slices of bread.

4. To assemble: place a slice of bacon on top of a slice of french toast and and some cheese and guacamole. Place another slice of french toast on top of it with a swirl of maple syrup.
