When planning our Greek meze dinner, I originally leaned towards making baklava for dessert. There were two problems with this idea: 1) The spanakopita was made with phyllo pastry, so using it for dessert as well would probably be a bit overkill; and 2) I wasn’t sure that there would be any baklava left by the time the guests arrived. #sorrynotsorry
Enter Greek frozen yogurt with honey and almond nibs. Double thick double cream Greek yogurt makes for the most delicious frozen treat. Drizzle it generously with honey and sprinkle with almond nibs – impress your guests like a top Top Chef finalist. Let me just say that you’ll be dancing like Zorba the Greek after a bowl of this frozen yogurt!
1,5 litre double thick double cream Greek yogurt (I used Lancewood – also love their range of cream cheese)
200 ml sugar
1 teaspoon vanilla essence
1. Beat together the yogurt, sugar and vanilla essence.
2. Churn your the yogurt mixture according to your ice cream machine’s specifications.
3. To serve, scoop yogurt into bowls and generously drizzle honey and top with almond nibs and fresh mint.
