Rigatoni with chorizo and peppers


Embrace Monday with this mix of Spanish and Italian flavours that will keep you coming back for more! I’m contemplating marrying these two cuisines with other dishes like pizza and paella as well. The flavours complement each other extremely well, it is as if they were meant to be together, forever and ever and ever *evil laugh*.

Spicy chorizo with onions, red and yellow peppers, and basil, oregano and paprika in a light tomato sauce over one of my favourite pastas, rigatoni. And to round it off, finely grated parmesan cheese. As my hubby would say: every bite is a masterpiece!




1 chorizo, cut into disks

1 teaspoon garlic

1 onion, sliced

1 red pepper, sliced

1 yellow pepper, sliced

1 teaspoon dried basil

1 teaspoon dried oregano

1 teaspoon paprika

1 can tomatoes

Parmesan cheese


1.Cook the pasta according to packet instructions. Drain the pasta once cooked and set aside.

2. In a separate pan, fry the onion and garlic  in a splash of oil. When the onion turns translucent, add the red and yello pepper.

3. Add the chorizo and sauté for about 5 minutes. Add the tomatoes, paprika, basil and oregano and simmer for 10 minutes.

4. Mix the chorizo mixture with the rigatoni and serve with parmesan cheese.

  1. This dish would make any Monday a little better! I love how you married the two cuisines together (I’ll evil laugh with you over here lol). This is exactly the type of dish I want to eat after a long day!
