Spicy chicken wraps with guacamole and feta cheese


Happy Cinco de Mayo! May your day be filled with tasty tacos, saucy enchiladas and delicious tres leches cake!

For this celebration I give to you a very spicy chicken wrap recipe. It is filled to the brim with fresh ingredients and resembles the Mexican flag with the reds, whites and greens (this was totally done on purpose). The creamy feta cheese and the cool guacamole mutes the sharpness of the fresh chillies, but you can decide how many chillies to add to your wrap. Eat, drink and be merry – 5 May only comes around once a year!



4 chicken breasts, deboned

1 teaspoon garlic

1 teaspoon thyme

Pinch of cayenne pepper

4 tortilla wraps

Store-bought guacamole

Feta cheese

Handful of fresh coriander

1 tomato, chopped

1 onion, chopped

2 red chillies, chopped


1. Place the chicken in an ovenproof dish and sprinkle it with the garlic, thyme and cayenne pepper. Cook it in a 180 degree oven for 20 minutes.

2. When the chicken is done, pull it apart using two forks.

3. To assemble your wrap, place pieces of chicken on your tortilla. Top it with some onion, tomato and chilli. Drop spoonful’s of guacamole and crumble some feta onto it. Then add the fresh coriander.

  3. I’ve often used feta instead of queso fresco and love it, so this chicken wrap sounds amazing! Hope you had a great cinco de mayo. Funny story-I made a Mexican hot chocolate cake with tres leches sauce and brought it into work, and then one of my employees brought in a tres leches cake lol, it was so fun to have both the cakes 🙂

    1. Oh my goodness that hot chocolate cake sounds awesome! Did you get any work done with all that cake? I would’ve guarded it to make sure no one takes more than his fair share! 😛
