Chicken tikka burger with camembert cheese

Chicken tikka burgers with camembert cheese. When you want a punch of spice muted by fresh, crisp lettuce and soft, creamy cheese. When you need a healthy chicken breast disguised as a full-blown take-out burger. When dinner needs to be done in a jiffy with the least amount of mess and fuss humanly possible.

This burger can become a weeknight regular – just adjust the amount of tikka on each chicken breast according to your spice-o-meter (only a pinch for the kiddos). If you have avocado or guacamole on hand, you can add some as well. Because, let’s face it, avo makes everything better. 🙂

2 chicken breasts

2 tablespoons chicken tikka spice (you can get this at your local supermarket or farmers market)

1 tablespoon macadamia oil (or olive oil)

2 burger buns

Handful of lettuce

1 tomato, thinly sliced

Thick slices of camembert cheese

  1. Roll the chicken breast with a rolling pin to flatten it out. Cover the chicken breasts in macadamia oil and then with the tikka spice.
  2. Heat your skillet grill. When it is nice and hot, place the chicken breast on the grill. Cook for 5 to 10 minutes, turn the chicken and cook for another 5 minutes.
  3. To assemble the burgers, place some lettuce on one half of a burger bun with a few slices of tomato. Put a chicken fillet on there with a few slices of camembert on top of that. Close the burger with the top half of the bun and enjoy.
