Chicken tikka burgers with camembert cheese. When you want a punch of spice muted by fresh, crisp lettuce and soft, creamy cheese. When you need a healthy chicken breast disguised as a full-blown take-out burger. When dinner needs to be done in a jiffy with the least amount of mess and fuss humanly possible.
This burger can become a weeknight regular – just adjust the amount of tikka on each chicken breast according to your spice-o-meter (only a pinch for the kiddos). If you have avocado or guacamole on hand, you can add some as well. Because, let’s face it, avo makes everything better. 🙂
2 chicken breasts
2 tablespoons chicken tikka spice (you can get this at your local supermarket or farmers market)
1 tablespoon macadamia oil (or olive oil)
2 burger buns
Handful of lettuce
1 tomato, thinly sliced
Thick slices of camembert cheese
- Roll the chicken breast with a rolling pin to flatten it out. Cover the chicken breasts in macadamia oil and then with the tikka spice.
- Heat your skillet grill. When it is nice and hot, place the chicken breast on the grill. Cook for 5 to 10 minutes, turn the chicken and cook for another 5 minutes.
- To assemble the burgers, place some lettuce on one half of a burger bun with a few slices of tomato. Put a chicken fillet on there with a few slices of camembert on top of that. Close the burger with the top half of the bun and enjoy.
