Who can resist a slice of freshly baked bread slathered with butter? Before you run to the local bakery, can I please introduce to you this easy peasy rustic butternut bread that comes together in a blink of an eye?

How often do you have leftover veggies from a cooked dinner that goes to waste? Too often. I love using spinach in an omelette or toasted sarmie the next day, but butternut often ends up in the dustbin. Stop the madness and start baking with your leftover pumpkin! It delicious and spicy and good for you, because veggies. Am I right? 😉

For a 750 g bread in a bread machine


300 ml water

1 tablespoons butter

125 g butternut, cooked and mashed

2 teaspoons nutmeg

1 teaspoon cinnamon

1 teaspoon salt

1 tablespoon sugar

1 tablespoon milk powder

550 g plain bread flour

1,5 teaspoons yeast


  1. Pour the water and butter in the bread pan.
  2. Add the butternut, nutmeg, cinnamon salt, sugar, milk powder and flour.
  3. Finally, add the yeast. Bake according to your machine’s specifications.
