It has been so misty the last few days, I can hardly see the roof of the neighbour’s house. It is as if the whole town has been swallowed by a giant cloud. Quite creepy and mysterious, but calm at the same time.

It has been harder than usual to get up in the morning due to the fact that we haven’t seen the sun for a while. And if it wasn’t for this almond and date granola I would probably have stayed in bed for three days straight. I’m not sure whether I should love or hate this granola. 😛 It is delicious though.

Ingredients:

400 g oats

150 g coconut

50 g flax seeds

100 g sunflower seeds

100 g almonds, chopped

12 dates, chopped

4 tablespoons honey

3 tablespoons butter

1 teaspoon cinnamon

Pinch of nutmeg

Pinch of salt

1 teaspoon vanilla essence

1 egg white

Method:

  1. Mix the oats, coconut, flax and sunflower seeds and almonds in a large bowl.
  2. Add the honey, butter, cinnamon, salt, nutmeg and vanilla essence. Mix well to ensure that the oats is covered completely.
  3. Stir in the egg white and place on a baking tray, spreading out the oats.
  4. Bake for 20 minutes at 180 degrees. Let it cool and add the dates before serving with yogurt or milk.
