With the weekend coming up we like to enjoy light dinners, because walking on the beach with the moon shining on the deep blue sea are the stuff that memories are made of. A bowl of this papaya and chicken salad is just the thing. It is healthy, fresh and will fill you up just enough to fuel your barefoot-for-miles-on-the-sand adventure. Have a great weekend!
3 chicken breasts, cubed
1 teaspoon garam masala
1 teaspoon chilli flakes
1 papaya, peeled and deseeded, cubed
Handful of baby spinach
Handful of fresh mint
100 g cashew nuts
1 round of feta cheese
- Brown the chicken in a splash of olive oil. Add the garam masala and chilli flakes and stirfry until cooked. Once done, set aside to cool.
- Arrange the spinach and mint with the papaya in a salad bowl. Add the chicken and top with cashew nuts and feta cheese.
- Serve cold with balsamic vinegar.
