I have the best intentions on Mondays: get enough exercise, eat healthier, get enough sleep and stop sweating the small stuff. By Monday evening most of these have blown out the window, but today at least I know I’ve got a healthy dinner sorted with this lentil salad with bacon, feta and mint. Here’s to new week’s resolutions!

Lentil salad with feta bacon and mint 2

Ingredients:

500 ml cooked brown lentils

250 g bacon

Handful of fresh mint

Handful of fresh parsley

Handful of cherry tomatoes, halved

Handful of calamata olives

1 red onion, sliced

1 yellow pepper, diced

1 round of feta, cubed

Method:

  1. Grill the bacon in the oven at 180 degrees for about twenty minutes, or until crispy. Set aside to cool.
  2. Arrange the lentils, mint and parsley in a salad bow and top with the tomatoes, olives, onion, yellow pepper and feta cheese.
  3. Serve with the grilled bacon and balsamic vinegar.
