I was recently introduced to the Swedish folk duo First Aid Kit. I can’t stop listening to their catchy tunes … it’s bordering on obsession. Kind of like my obsession with granola, as you might have noticed (and you don’t even see half of it here on the blog). But seriously though, this one is sweet and nutty and crunchy and just plain delicious. 🙂

Mixed nut and honey granola 3

Ingredients:

400 g oats

150 g coconut

50 g flax seeds

80 g almonds, chopped

80 g cashew nuts, chopped

80 g macadamia nuts, chopped

4 tablespoons honey

3 tablespoons butter

1 teaspoon cinnamon

Pinch of nutmeg

Pinch of salt

1 teaspoon vanilla essence

1 egg white

Method:

  1. Mix the oats, coconut, flax seeds and nuts in a large bowl.
  2. Add the honey, butter, cinnamon, salt, nutmeg and vanilla essence. Mix well to ensure that the oats is covered completely.
  3. Stir in the egg white and place on a baking tray, spreading out the oats.
  4. Bake for 20 minutes at 180 degrees. Let it cool and serve with yogurt or milk.
