I’ve been having some internet problems this week (hence today’s recipe is the first post of the week). Fortunately my hubby was able to solve these problems with only a few hours with the call center, numerous emails and a trip to the nearest big town. Yeah, it was a tough week – but we’re back with a vengeance! Hello uncapped internet! Whoo hoo!

So let’s call this couscous and chicken salad with figs and peaches (and mint) a celebratory one. Two of my favourite fruit with some chicken cooked with garam masala, cumin and coriander. And couscous for good measure. The flavours are just gorgeous together. Look at those figs! #swoon

Couscous and chicken salad with figs and peaches 2

Ingredients:

2 chicken breasts

2 teaspoons garam masala

1 teaspoon cumin

1 teaspoon coriander

200 g couscous

1 tablespoon butter

4 figs, halved

2 peaches, sliced

Handful of fresh mint

Method:

  1. Cover the chicken breasts with some olive oil and rub with the garam masala, cumin and coriander. Place in a hot skillet and cook until done.
  2. Add a cup of boiling water to the couscous and stir with a fork until the couscous has swollen, then add the butter.
  3. To assemble the salad, place the couscous on the bottom of the bowl and top it with slices of chicken, figs and peaches. Add the fresh mint.

  1. My comment has nothing to do with your recipe but I visited Stillbaai on Monday while travelling back from Cape Town and was very impressed. I did not realise that it was so big. Very nice, lovely looking homes.
