When I first made these date balls, I thought they were a healthy substitute for old fashioned date balls. But these yummy snacks doesn’t need to stand aside for any cookie – they are a delicious sweet treat any time of the day. These date balls are quite filling and would make for a perfect lunch box treat or a breakfast on the go.

Ingredients:

400 g pitted dates

50 g cashew nuts

50 g peanuts

250 g oats

50 g pumpkin seeds

50 g sunflower seeds

50 g flax seeds

Method:

  1. Place the dates in a small pot and cover with boiling water. Cook until the dates are soft and mash until it forms a pulp.
  2. Mix the nuts, seeds and oats into the dates. Place spoonfuls of mixture into a small muffin pan.
  3. Cook for 25 minutes at 180 degrees. Set aside to cool before serving.
