With the weather we’re experiencing (rain, cold, rain, rain, and more rain) I should’ve opted for a soup or curry recipe for today. Instead I give you this hearty pearl barley and chicken salad with pomegranate and other goodies, because I’m still living in a world where it is autumn (I-don’t-need-to-wear-six-jackets-type-of-weather). I’ve seasoned the chicken with a spicy coffee herb mix that gives it an earthy taste that marries well with the sweet yellow pepper and fresh cucumber. Also, how pretty are those pomegranate seeds?

Ingredients:

1 cup pearl barley

1 teaspoon garlic

2 chicken breasts, cut into bite sized cubes

1 teaspoon coffee powder

Pinch of mustard seeds

Pinch of coriander

Pinch of red chilli flakes

Pinch of cumin

Pinch of thyme

Black pepper

1 round of feta

Half a cucumber, diced

1 yellow pepper, diced

1 red onion, chopped

Seeds of half a pomegranate

Method:

  1. Add 5 cups of water to the 1 cup pearl barley and cook for an hour. Once done, set aside to cool.
  2. Brown the garlic and the chicken in a splash of olive oil and flavour with the coffee, mustard seeds, coriander, chilli, cumin, thyme and black pepper. Once cooked, set aside to cool.
  3. To assemble the salad, toss the pearl barley and chicken together with the feta, cucumber, yellow pepper, red onion and pomegranate. Add fresh mint and fresh coriander for extra punch.

  1. I still find it so cool that as bloggers we can “befriend” people who not only are not local, but are in the opposite hemisphere. Sorry that the weather has been cold 😦 We’re just starting to warm up so this recipe looks perfect for a great early summer lunch!
