I’ve baked these date and banana muffins with pecan nuts for the first time a few weeks back, and now I’m totally hooked. I can’t get enough of it! I literally make the trip to the grocery store just to buy a few bananas so I can bake these beauties. It looks kind of weird, my basket totally empty but for a few bananas in a plastic bag. It is worth it, though. Every bite a masterpiece, as my hubby would say. 🙂
We all complain about the same thing these days: there is not enough time to do the things you want to do, every second goes towards things that need to be done. Hopefully my luck will change and I’ll be swimming in my money like ol’ Scrooge McDuck in the near future… #wishfulthinking. In the meantime I’ll be making time to savour this corn, bacon and jalapeno bread. Totally worth leaving the ironing for tomorrow. 😉
Why is it that weekends go by so fast? I’m really bummed by this fact this morning. All I wanted was one more morning where I could sleep in, lounge around the house while sipping a coffee and enjoy these delicious pear and caramel muffins, and then around ten decide if I’m staying in my PJ’s all day or go for a stroll on the beach. Is that too much to ask? I think not. But since it’s Monday I only have these muffins as a distant memory of the past weekend. Hope you enjoy them.

Life is funny. You will not believe how much freelance work I have in this small coastal town – much more than I had in the big bad city. And it’s not corporate design work, it’s work I have to do for farmers, local coffee shop owners and curio shops … fun stuff that makes me happy. I’m sure it won’t be like this forever and ever, but I’m enjoying it while it lasts.
